This time we will take you under the Prague's Petřín, to the restaurant Kolkovna Olympia, where manages the kitchen, unconventional woman - Jarmila Zámečníková. Olympia Restaurant with atmosphere of first republic, as the third of the successful series Kolkovna restaurants, find on Prague´s Újezd on the corner of ​​Zborovská and Vítězná street.

 

Ingredients:

Salmon with herb crust and fennel salad

Salmon - 800 g (4 steaks)

Light bread - 60 g

Parsley leaf 15 g

5 g chives

Salt

Black pepper

Butter

Lemon 2pcs

Dijon mustard 5 g

Olive oil 70 g

Honey 30 g

Orange 120 grams

Icing sugar

700 g fennel

Dill - 2 sprigs

Procedure:

Grate the hard bread, chop herbs. The crusts finely grated lemon zest, salt and pepper and add the softened butter and mix everything well. Season with salt and salmon on the surface give herb crust. We'll bake at 180 degrees 10-12 minutes. Meanwhile, prepare the fennel salad dressing. In a bowl, mix mustard, honey and olive oil. Add the grated orange zest, garlic, and powdered sugar. Cut fennel salad and add dressing done, add the chopped dill and mix well. Prepared food decor by dill and baste by dressing from the salad.
